    Background: Nisin is a commercially bacteriocin used as natural food preservative, with molar mass of 3.4 kDa, produced by Lactococcus lactis ATCC 11454. Its biosynthesis has been studied in cultures using complex media, milk and milk derivates.Aim: evaluate growth conditions for L. lactis as well as the effect in nisin production when utilizing
