Bromelain, a set of proteases found in tissues of pineapple, is of cosmetic and pharmaceutical interest because of its antifibrinolytic, healing and anti-inflammatory activity. The study of its stability when applied to cosmetic formulations is necessary to ensure safety and efficacy of the product up to the time of use.
