INTRODUCTION Nitrites are additives which are used as pickle component, primarily from making steady color pickle meat. In the making color process, all amounts of nitrites have not bind with meat components. One part of nitrites remains as free nitrites. MATERIAL AND METHODS The total of 6 samples of variety meat products from the market..
