Bromelain is a set of proteolytic enzymes, which can be obtained from pineapple (Ananas comosus) wastes, particularly the peel. Bromelain has clinical and therapeutic applications, mainly related to selective debridement of burns, and improvement of antibacterial, anti-inflammatory and antithrombotic activities.
