    I. Background

    Ferulic acid and Caffeic acid, which are naturally occurring phenols present in a wide variety of plants, inhibit nitrosamine formation and also exhibit anti-oxidant, anti-inflammatory and anti-tumor effects
    in vivo

    . Recently, we confirmed their suppressive effects on the production of melanin pigment in mouse B16 melanoma cells.
